Sunday Funday

Which ironically enough was not that fun but regardless its sunday so that means its time to cook! I made chicken cacciatore and protein pancakes...
So of course you want to know how I made these delicious meals... why else would you be reading this!?

If you know me then you know I like to keep things very simple... 
Cut up chicken (about 5 breasts)
season with olive oil, parsley, oregano, garlic, onion, pepper
(I let it sit in the fridge for a few hours)
Cook chicken in a frying pan like so...
In pot, add olive oil, peppers, onions, mushrooms and artichokes cook for a few minutes on med high



Add two cans of tomatoes (I used diced but any will do)
Add chicken, lower heat & cover



Now for breakfast... protein pancakes (simple, plain)



(makes 3-4 servings)
9 egg whites, 3 whole
1/4c soy flour
3/4 plain oats
Sweetner
Cinnamon
Pumpkin Spice

Beat all ingredients together,
and cook on a frying pan 

I topped it with cinnamon and more truvia
NOM NOM.
